Apple Oat Breakfast


INGREDIENTS

  • 1/2 tablespoon unsalted butter

  • 1 medium crisp apple, about 1 1/2 cups diced

  • 2 tablespoons brown sugar

  • 1/2 teaspoon vanilla extract

  • 1 cup old fashion oats

  • 1 teaspoon cinnamon

  • 1/2 teaspoon salt

  • 2 cups water

OPTIONAL

  • 1/2 cup chopped walnuts

  • 1/2 cup milk

  • Drizzle of honey

INSTRUCTIONS

In a medium saucepan melt butter. 

Add apple and brown sugar. 

Cook, stirring at all times for 2-3 minutes. 

Add vanilla extract and cinnamon. 

Stir in old fashion oats, water and salt. 

Bring to a soft boil. 

Cook, stirring constantly for 3-4 minutes or until most of the liquid is absorbed and the oats are done. 

Divide into two bowls. 

Add walnuts and milk and drizzle of honey if desired.
